Recipe Friday: HEALTHY Single Serve Dark Chocolate Chip “Pizookie”

Been a while since we recipe talked hasn’t it? That’s because my breakfasts consist of oatmeal or almond butter on toast with fruit, my lunches are salads and my dinners are typically a one-bowl meal consisting of a protein, quinoa, a grilled veggie and whatever else I have to throw in there. BORING.

So let’s talk dessert.

I’m a big dessert advocate. I require dark chocolate after every meal. We know this.

So last night, after I had dinner (a big bowl of yum: quinoa, roasted sweet potato piece, avocado and grilled chicken), I still needed… something. You know that feeling? I know it incredibly well. I was enjoying a marathon viewing session of Modern Family  and thinking about how badly I too want to go to Australia when it hit me. I wanted DESSERT.

I didn’t just want my usual square (or 4) of dark chocolate from the freezer. I wanted something legit.

I thought about making cookies but frankly I had just done 17 minutes worth of dishes and that seemed like quite the endeavor. I do not have time for that.

Conundrum….

Then I thought… okay single serve cookie.

Which then made me realize I’d still have to dirty up an entire cookie sheet. And I don’t actually know how to make cookies from scratch without a recipe.

Then it hit me.

SINGLE SERVE COOKIE CAKE. Or as I will always affectionately refer to a slightly undercooked cookie… a pizookie. I had my first pizookie at a place called Oregano’s while in college in Tucson Arizona. It’s exactly that : a slightly undercooked cookie. Doughy and perfect with a scoop of ice-cream on top.

Our pantry was looking bleak but I worked with what I had.

And so I present to you.

Single Serve Dark Chocolate Chip “Pizookie”

Ingredients:

1/4 c coconut flour

Pinch of almond flour

2 T coconut sugar

2 T unsweetened vanilla almond milk

~1/8 t baking soda

~1/4 t baking powder

1/4 c applesauce

1/8 – 1/4 t vanilla extract

Pinch of salt

2T dark chocolate chips

Directions:

Preheat oven to 350*

Grease up your baking vessel so everything doesn’t stick to the sides (I used coconut oil spray)

Mix everything together in an oven safe ramekin.

Bake for 15-20 minutes.

DESSERT PERFECTION.

With zero guilt.

If you have a well-stocked freezer top with a scoop of ice cream or gelato. I was appalled at our lack of frozen dessert so I added a bit more almond milk and went to town on this thing. I don’t think I’ve ever been so happy eating a dessert. I’m not even kidding it was PERFECT. Also if you aren’t gluten-free just use regular flour. Or wheat flour. But I can’t vouch for either of those. You could also use GF flour, I was just out.

I’m not even sure this is actually paleo, I just made that claim on Twitter. If you are of the paleo following and this isn’t paleo, please tell me. If you could also tell me what exactly paleo is, I would also appreciate that.

I remember studying abroad in London and having my parents ship me all my favorite things! I loooove seeing all the food you make in Switzerland with your hubby and on your girls nights!
